A delicate seafood spring roll is set in citrus consommé and crowned with caviar and edible flowers — balancing bright acidity with richness and crunch. Served in handmade bowls, it's the kind of detail that elevates the entire evening.

The night kicked off with line-caught ahi, kissed with a hard sear and laid over fresh local greens. A drizzle of citrus-miso vinaigrette tied it all together—bright, bold, and pure Maui on a plate.
