The clients reached out a few weeks before their trip. A family of six, celebrating a milestone anniversary. They wanted something special but not stiff. Elegant, but still comfortable enough to feel like a Maui vacation dinner at home.

We talked through their tastes, allergies, and memories from past trips to the island. They loved seafood, bright flavors, and a little bit of playful luxury. By the end of the call, I could already see the menu forming.


Course One: Beet Cured Crudo

I always like to begin a meal with something light and vibrant. For this dinner, it was a beet cured fish crudo, finished with toasted macadamia nuts, fresh herbs, citrus zest, and delicate edible flowers.

The color alone set the tone. Deep ruby red against a crisp white plate, bright and alive. It tasted like Maui, clean and fresh with just enough richness from the macadamia.

As I set the plates down, the table went quiet for a moment. That’s usually a good sign.

Course Two: Modern Prawns


For the next course I wanted something a little unexpected.

Chilled prawns wrapped in translucent rice paper, paired with small pops of caviar and citrus. A dish that feels playful but eats elegant.


The family laughed as they tried to guess what was inside each roll. It was fun, interactive, and just a little different from what they expected from a private chef dinner.

Exactly what I was hoping for.

Course Three: Comfort with a Twist


Midway through the meal I shifted gears.

A silky tomato soup, poured tableside, with a crispy arancini crowned in caviar and fresh dill. Familiar flavors presented in a way that felt refined and a bit indulgent.

The husband told me it reminded him of a childhood favorite but “grown up in the best possible way.”


Moments like that are why I love this job.

Course Four: The Showstopper


Every tasting menu needs a dish that makes people stop and stare for a second.

For this dinner it was a slow-cooked pork belly course inspired by Korean flavors. Sticky glaze, bright herbs, and tender meat with just the right amount of richness.


This was the course that got the most smiles around the table. Forks scraping plates clean. The kind of silence that only happens when people are really enjoying their food.

Course Five: A Golden Finish


Dessert had to feel celebratory. After all, this was an anniversary.

I finished the night with a rich chocolate creation wrapped in delicate edible gold leaf, served with a smooth caramel accompaniment.


When I brought it out, the room lit up. Cameras came out. Laughter followed. The perfect ending to a long, relaxed evening.

By the time I cleared the final plates, the family had moved from the dining table out to the lanai with glasses of wine, watching the Kapalua sunset fade into night.
